Meatballs and Noodles

Preheat oven to 350

1# ground beef
2 sleeves of Ritz Crackers, crushed
1 envelope brown gravy mix
1 envelope onion soup mix
1 can of cream of chicken soup
2 eggs
1 tbsp. dried parsley
S & P to taste

Mix above ingredients together and form into 1-2" meatballs. In the
bottom of a large skillet, pour enough OLIVE OIL to cover bottom of
pan and brown meatballs. Drain with slotted spoon onto paper towel.
When drained, put meatballs in a baking dish, cover with tin foil and
cook for 25 minutes or until done throughout.

While the meatballs are cooking...

Combine thoroughly 2 envelopes of brown gravy mix, one envelope of
mushroom gravy mix, one envelope of onion soup mix, 2 tsp. of
Dijon-type mustard, 1 tsp. Worchestershire sauce, s and p to taste.
Pour into a large saucepan. Set aside.

Cook one medium size package of egg noodles, drain, add 2 tbsp. of
oleo to coat then place in LARGE mixing bowl.

When meatballs are done, take out of oven and cook the saucepan of
gravy/soup mix until thick. Add three tablespoons of sour cream and 2
tsps. of dillweed. Put meatballs in mixing bowl of noodles and pour
sauce over, mixing until noodles are well coated.

Serve with mandarin/orange Jell-O salad (three large cans of mandarin
orange slices mixed into three packages of orange gelatin.
Use juice from oranges along with water to make gelatin.
Serve with hot buttered garlic bread.

These meatballs can be dropped into marinara sauce and slurped over spaghetti.

They can also be dropped onto Italian bread, topped with mozzarella, asiago
or Parmesan cheese and become a wicked meatball sandwich.

You can take the mixture and make it into patties,
grill them for hamburgers OR put them into a casserole dish and
pour a jar of marinara sauce over to make Salisbury Steaks
or a large jar of brown gravy to make Swiss Steaks.

You can line a loaf pan with three slices of bread (to soak up grease)
and mold the mixture into it.
Pour on a jar of Pizza Quick sauce to make meatloaf.
